Vegetarian Recipes
I've just put together a collection of 12 of the recipes I've made most often this year. All are vegetarian, most take between 40 and 60 minutes to prepare. Mostly straightforward ingredients you can find at our local Farmer's Market and the other stores in town. Here's one for all of you:
Cheesenut Loaf or Burgers
Redwood Nonviolence Community
Makes 6 – 7 burgers.
1 large onion, chopped fine
1 stalk celery, chopped fine
1 cup walnuts, ground in the food processor
1 cup grated cheddar or mozzarella cheese
1 cup cottage cheese
1 cup oats (not quick oats and nothing with sugar or apples-n-spice premixed in)
3 – 4 eggs
3 Tbsp oil
1 – 2 Tbsp herbs
Saute the onion until translucent. Mix with walnuts, cheddar, cottage cheese and oats.
Stir in the eggs and mix well.
Season as you wish.
Heat an oiled pan on low. Form burgers (very gooey) one at a time.
Cook until brown on each side.
Serve on buns, or not.
Notes and Variations:
1. I use Herbes de Provence as my herbs. You can try anything you feel adventurous enough to eat. The recipe suggests: garlic powder, marjoram, sage and/or basil and it doesn’t offer any measurements.
2. I wasn’t going to include any recipes this reliant on cheese, but this is such a fantastic recipe….I serve it with ketchup or salsa or barbeque sauce and homemade French fries. So satisfying!
3. These CANNOT be cooked on a grill. The mixture keeps okay overnight for making a second batch the next day, but I don’t think the burgers keep well once cooked.
4. At Thanksgiving, you can use the same recipe and bake in a bread loaf. Grease the pan, spoon the mixture in, cover with foil and bake at 350 for 1 ½ - 2 hours. Serve with vegetarian gravy.
I'd love to see some other people's favorites. Can I request that they be vegetarian so I can use them?

Hi Heather,
Since I see you have cheese and eggs, I guess you would be ok with Honey. There are some good "holiday" drinks that have Honey in them, in the "adult beverage" catagory!

OK Heather,
Well I did make a garlic-studded, maple glazed natural pork roast that this went with but the vegetarian part of the dinner was fresh chestnuts and brussels sprouts with a little butter and nutmeg and crispy sweet potato fries. I will be happy to forward you either of these recipes if you desire. The garlicy, sweet, caramelized, nutty, flavors with the hint of butter and nutmeg were just amazing combinations. Thanks so much for sending me the recipes and I'd like to hear how your dinner turned out!
