Dishing Ojai: Key Limes
Starr Market has little itty bitty fresh Key Limes in their produce section, so I thought I would share that tidbit in addition to my husband's recipe for Key Lime Pie - it's super easy and perfect for summer.
KEY LIME PIE:
1 14oz can sweetened condensed milk
3 egg yolks
1/4 cup key lime juice (10-15 limes)
1 9" graham cracker crust (purchased or made using recipe that follows)
Pre-heat oven to 300 degrees.
Blend milk and yolks on low, add key lime juice, pour mixture into crust and bake for 15 minutes, let cool then refrigerate 1-2 hours.
Garnish with key lime zest and fresh whipped cream (add some fresh berries if you like).
GRAHAM CRACKER CRUST:
11 double graham crackers
2 tablespoons sugar
1/4 cup (1/2 stick melted butter)
Pulse crackers with sugar, drizzle in butter, pulse.
Press into 9" pan, chill 30 minutes.
Bake 10 minutes at 325 degrees.

Thanks for the inspiration, Lisa. I just put up a recipe for my favorite smoothie using fresh local fruit. This looks delicious, by the way.
