Dishing Ojai: Key Limes

Starr Market has little itty bitty fresh Key Limes in their produce section, so I thought I would share that tidbit in addition to my husband's recipe for Key Lime Pie - it's super easy and perfect for summer.

KEY LIME PIE:
1 14oz can sweetened condensed milk
3 egg yolks
1/4 cup key lime juice (10-15 limes)
1 9" graham cracker crust (purchased or made using recipe that follows)
Pre-heat oven to 300 degrees.
Blend milk and yolks on low, add key lime juice, pour mixture into crust and bake for 15 minutes, let cool then refrigerate 1-2 hours.
Garnish with key lime zest and fresh whipped cream (add some fresh berries if you like).

GRAHAM CRACKER CRUST:
11 double graham crackers
2 tablespoons sugar
1/4 cup (1/2 stick melted butter)
Pulse crackers with sugar, drizzle in butter, pulse.
Press into 9" pan, chill 30 minutes.
Bake 10 minutes at 325 degrees.

That's all I've got for now because we're off to the Big Apple for the week. Ojai Girl conquers the Empire State, look out (I smell a story). When I get back I'll tell you why I hate August (and it's not just because football is on right now).

Thanks for the inspiration, Lisa. I just put up a recipe for my favorite smoothie using fresh local fruit. This looks delicious, by the way.
